Start your morning off right with this great overnight oat recipe. I was inspired by this recipe when a friend from high school, Tiffany posted it on her Instagram page. Now, I am not a breakfast person at all, I either have no time or I just drink a cup of coffee and I am on my way. I know that is really bad. But I figured I would try this out. After the first morning, I was telling anyone who would listen about this recipe. I am OBSESSED and now have this for breakfast about four times a week. Yes it is that good!
You make the oats the night before, so there is little work or prep in the morning and you are guaranteed a healthy and fulfilling breakfast that will hold you over until lunch! This recipe will make 2 servings, so you will either have one to share or just an extra for the following morning.
First you start out with the base, steel cut oats (NOT rolled oats), chia seeds and ground cinnamon and you need to stir them together really well. I prefer using a fork, I feel it mixes better than your average spoon.

Then add the almond milk or any milk that you have in the refrigerator, it’s your call. If you are using soy or nut milk, just make sure it is unsweetened. Now mix really, really well! Like get in there and make sure it is all combined. Next cover and store in the refrigerator and wait until morning….

Good Morning! Now all you have to do is stir and add your topping(s). I mean you can just have it plain but I recommend at least a touch of honey. My go-to is strawberries, blueberries and bananas with honey. But you really can add whatever you like, maybe swap the honey for some agave nectar. The texture is going to be a mix between oatmeal and a granola bar. I must say you can’t go wrong with having this simple, portable breakfast. I hope you enjoy it as much as I do!

Cinnamon Overnight Oats
yields: 2 serving
1/2 cup steel cut oats
1 tablespoon chia seeds
1/4 teaspoon ground cinnamon
6 ounces unsweetened almond milk, soy milk or any milk you like
optional toppings: assorted fruits, honey
equipment: two 8 ounce jars or lidded containers
Divide the oats, chia seeds and cinnamon into the two jars, mix well. Add 3 ounces of almond milk to each jar, stir until combined and place lids on jars. Refrigerate overnight. In the morning, stir well, top with assorted fruit and honey. Will store in refrigerator up to 3 days.
